Sugar & Spice Muffins

This weekend I indulged in 2 straight days of sleeping in past noon, finishing a new embroidery piece, a 6-mile run and walks on the beach with Jim :)dsc_0941I also spent my free time trying out a new muffin recipe found via this post.  I amped up the flavor with a bit more spice to suit my taste and the result was quite delicious.

Jim and I enjoyed grabbing these in the morning for breakfast or as an afternoon snack – There’s only one left!dsc_0938Ingredients (makes about 8 muffins)

  • 3/4 cup sugar
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp freshly ground nutmeg
  • 1/2 tsp pumpkin spice
  • 1/4 cup vegetable oil
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • 1/2 cup granulated sugar

Directions

  1. Preheat oven to 350*F and apply non-stick spray to muffin tin.
  2. Beat together sugar and egg in a large bowl to incorporate air until mixture is pale yellow in color.
  3. In another bowl, whisk together flour, baking powder, salt, nutmeg and pumpkin spice.
  4. Pour dry ingredients into egg mixture and stir with spatula to combine.
  5. Add vegetable oil, milk and vanilla extract and stir until just combined.
  6. Add about 1/3 cup of batter to each muffin cup and pop in the oven.
  7. Bake for about 20 minutes or until toothpick inserted into center of muffins comes out clean.
  8. Allow muffins to cool, brush tops with melted butter and roll in sugar.
  9. Enjoy!
