Saturday Breakfast Burrito

Looking for something substantial and delicious to eat when you wake up on a lazy Saturday?  This quick and easy breakfast burrito should do the trick!

Ingredients (Serves 1):

  • 3 eggs
  • 1/2 tsp. cayenne pepper*
  • salt and pepper
  • olive oil
  • tortilla
  • 2 tbsp. fresh salsa
  • hot sauce*

*You can omit/reduce these to suit your taste.


  1. Heat a skillet with a drizzle of olive oil over medium to medium-high heat.
  2. In a small bowl, mix the eggs, a pinch of salt, a pinch of pepper and the cayenne pepper.
  3. Pour egg mixture into the skillet and scramble until cooked, 2-3 minutes.
  4. Put the eggs, salsa and a few drops of hot sauce into the tortilla.
  5. Wrap and enjoy!

You may also add some cooked sausage or cheese for a little more “oomph”.
