Discovered this strange, two-toned sweet potato while prepping dinner over the weekend:
Despite it’s odd coloration, we chopped it up and and used it in one of our favorite side dishes:
Spicy Brown Sugar Sweet Potato Fries
Ingredients: (Feel free to adjust seasonings to your taste!)
- 2 large sweet potatoes, cut into wedges 1/2 inch thick
- olive oil
- pinch of salt
- pinch of pepper
- 1/2 teaspoon cayenne pepper
- 1 tablespoon brown sugar
Directions:
- Preheat oven to 425 degrees F.
- Put sweet potato wedges in a large bowl and coat with olive oil.
- Add salt, pepper, cayenne and brown sugar and toss until seasonings are distributed evenly.
- Line a baking sheet with tin foil (or a silicone mat) and spread out the potatoes in an even layer.
- Bake potatoes until slightly golden and tender, about 45 minutes to an hour.

Avocado BLTs on Rye
Ingredients: (Makes 2 sandwiches.)
- 6 slices bacon
- 1 avocado, pitted and sliced
- 1 large tomato, sliced
- a few leafs romaine lettuce
- fresh cracked pepper
Directions:
- Preheat oven to 425 degrees F.
- Lay strips of bacon on a cooling rack placed on a baking sheet, this will catch the drippings as the bacon cooks.
- Bake bacon for about 30 minutes, remove when crisp, but not burnt.
- Toast rye bread and layer with cooked bacon, lettuce, tomato and avocado.
- Top with cracked black pepper.
